Directions
Makes: 6 servings
Spray pan with olive oil. Over medium-high heat, cook boneless chicken with garlic and cumin. Shred chicken when cooked.
Ingredients:
2 Boneless Chicken Breasts
1⁄4 teaspoon Cumin
1⁄2 teaspoon Garlic, minced
Add ingredients and simmer for 20 to 30 minutes.
Ingredients:
3 cups Water
2 cups Celery, chopped
2 cups Carrot, chopped
1 can Black Beans
1 can Stewed Tomatoes, drained
1 can Corn Kernels
1 cup Salsa
3 tablespoons Fresh Cilantro, chopped stems
1 cup Onion, chopped
4 cubes Chicken Bouillon
1 tablespoon Lemon Juice
1⁄2 teaspoon Chili Powder
Pour serving of soup in bowl. Mix a scoop of plain Greek yogurt into each bowl and top with avocado and or tortilla chips if desired.
